Papa Rambo's Sweet Chili

My dad's chili is pretty much the bomb diggets and I have loved it since I was a kid.

Chili is my comfort food for cold seasons and, where I'm from, that is about 9 months out of the year. So, you can imagine how much I eat and love this warm, delicious concoction. On this particular day, I had brought myself a decent helping to work! **Travel Tip: Talenti gelato containers are so awesome for carting around food. The lids screw on so there is zero chance of leakage. This makes me and my purse very happy.

On to the important stuff: the recipe. The overall prep and cook time for this pot of gold is about 3 hours. It feeds about 6 hungry people - 8 if you've had some appetizers. 

Papa Rambo's Sweet Chili


4-5 Stalks of Celery (diced)
2lbs of Hamburger (can sub ground turkey)
1 Onion (diced)
1 Green Pepper (diced)
2 Cans Diced Green Chilies (optional - I leave out)
2 Cans Dark Red Kidney Beans
2 Cans Diced Tomatoes
2/3 Cup of Brown Sugar (I use about 1/4 cup - 2/3 is too sweet for me!)
2-3 Cans of Tomato Paste
Chili Powder

Sautee vegetables in butter until soft and onions are translucent  While the vegetables are sautéing, cook the hamburger meat and drain all fat from the meat. After cooked, place vegetables, hamburger, beans, diced chilies, and diced tomatoes into pot and fill with water just above the veggies & meat. Insert chili powder to taste, let simmer for ½ hour. Then, insert tomato paste and brown sugar. Let cook for 2 more hours and serve!

If you find that you are struggling to get all the tomato paste out of the can, you can refer back to my little tip from my previous post here. It has saved me from struggling with a spoon to get all that tomato goodness out!

When I serve my chili, I love to have some sharp cheddar shredded on top. A dollop of sour cream doesn't hurt either. Even if you eat it plain, this chili is AMAZING. And gluten-free, which is a plus for us Celiacs.
